You can’t argue with the fundamental ingredients of a full English breakfast, but you can get creative with them.
This recipe is a lovely, simple way of putting a spin on the British classic. Not only does it taste great and take care of a bunch of leftovers in the fridge, it also really looks the part.
INGREDIENTS
From the fridge: Bacon, Sausage, Tomatoes, Portobello Mushrooms, Feta Cheese, Egg.
From the cupboard: Potatoes.
Could add: Black Pudding, Beans, Chorizo.
METHOD
Dice the potatoes, bacon and sausage in to small cubes.
Heat butter or a small splash of olive oil in a frying pan and fry the potatoes, Sausage and bacon until cooked through and brown.
With a teaspoon, hollow out the Portobello Mushrooms, removing the stems and gills.
Spoon in the fried ingredients and top with Feta Cheese.
Grill for around 15 minutes or until the mushroom is soft and the top has been well baked.
Serve with a fried egg on top.
